Cheesecake Filling:

  • 2 packages (16 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs

Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup butter, melted

Blueberry Topping:

  • 1 1/2 cups fresh blueberries
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 tbsp cornstarch

Instructions

  1. Prepare Graham Cracker Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  2. Make Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Pour over crust.
  3. Bake: Bake at 325°F for about 45-50 minutes until the center is almost set. Let cool.
  4. Create Blueberry Topping: Combine blueberries, sugar, and water in a saucepan. Mix cornstarch with a little water and add to the blueberry mixture. Cook until thickened.
  5. Chill: Spread blueberry topping over the cooled cheesecake. Chill for a few hours before serving.
