Cheesecake Batter:
16ounces cream cheese, softened
3/4cup granulated sugar
3 large eggs
1cup heavy cream
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1/2cup fresh blueberries
Additional:
Extra fresh blueberries for topping
1 tablespoon powdered sugar for dusting (optional)
Instructions
Preheat the oven: Preheat the oven to 425°F. Line a 9-inch springform pan with parchment paper, ensuring it extends above the edges.
Prepare the batter: In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time. Mix in heavy cream, flour, vanilla extract, and lemon zest. Gently fold in blueberries.
Bake: Pour batter into the pan and bake for 45-50 minutes until golden brown and slightly jiggly in the center.
Cool and serve: Let the cake cool in the pan, then refrigerate for at least 4 hours. Serve chilled or at room temperature topped with blueberries and powdered sugar.
Notes
For a stronger blueberry flavor, slightly mash half of the blueberries before folding into the batter.
The burnt top and creamy center are intentional features of a Basque cheesecake.
