Description

Shrimp Scampi with Spaghetti is a classic Italian-American pasta dish featuring succulent shrimp, a garlic butter sauce, and tender spaghetti. The dish is quick, flavorful, and perfect for a weeknight dinner or special occasion.


Ingredients

  • 8 oz spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. Cook the spaghetti according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil and butter over medium-high heat until the butter is melted.
  3. Add the garlic and red pepper flakes (if using) and cook, stirring constantly, for about 1 minute until fragrant.
  4. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  5. Pour the white wine into the skillet, scraping up any browned bits from the bottom. Bring the wine to a simmer and cook for 2-3 minutes, reducing slightly.
  6. Return the shrimp to the skillet and add the lemon juice, salt, and pepper. Stir to combine.
  7. Add the cooked spaghetti to the skillet, tossing to coat in the sauce. If the pasta seems dry, add a little reserved pasta water to reach the desired consistency.
  8. Sprinkle with fresh parsley and toss again. Serve immediately, topped with grated Parmesan if desired.

Notes

  • For a gluten-free version, use gluten-free pasta.
  • Feel free to add vegetables like spinach or cherry tomatoes for extra flavor and nutrition.
  • Adjust the amount of red pepper flakes based on your spice preference.
