- 8 oz spaghetti
- 1 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 3 tbsp unsalted butter
- 5 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup dry white wine
- Juice of 1 lemon
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley
- Grated Parmesan cheese, for garnish (optional)
Instructions
- Cook the spaghetti according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil and butter over medium-high heat until the butter is melted.
- Add the garlic and red pepper flakes (if using) and cook, stirring constantly, for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Pour the white wine into the skillet, scraping up any browned bits from the bottom. Bring the wine to a simmer and cook for 2-3 minutes, reducing slightly.
- Return the shrimp to the skillet and add the lemon juice, salt, and pepper. Stir to combine.
- Add the cooked spaghetti to the skillet, tossing to coat in the sauce. If the pasta seems dry, add a little reserved pasta water to reach the desired consistency.
- Sprinkle with fresh parsley and toss again. Serve immediately, topped with grated Parmesan if desired.

- For a gluten-free version, use gluten-free pasta.
- Feel free to add vegetables like spinach or cherry tomatoes for extra flavor and nutrition.
