12ounces linguine or spaghetti pasta
Shrimp:
1pound large shrimp, peeled and deveined
Sauce:
4 tablespoons unsalted butter
3 tablespoons olive oil
4 cloves garlic, minced
1/2cup dry white wine or chicken broth
1/2 teaspoon red pepper flakes
1cup grated Parmesan cheese, divided
1/2cup shredded mozzarella cheese
1/4cup chopped fresh parsley
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
cooking spray or butter for greasing
Instructions
Preheat and Grease: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
Cook Pasta: Cook the pasta according to package directions until al dente, then drain and set aside.
Prepare Sauce: In a large skillet, melt butter with olive oil. Add garlic and cook until fragrant. Stir in wine or broth and red pepper flakes. Simmer to reduce slightly. Add shrimp and cook until pink. Stir in lemon juice, zest, salt, and pepper.
Combine and Bake: Toss pasta with shrimp mixture, half of Parmesan, and parsley. Transfer to baking dish, top with remaining cheeses. Bake for 20-25 minutes until cheese is melted and bubbly. Garnish with parsley before serving.
Notes
For a creamier version, mix 1/2 cup heavy cream into the shrimp mixture before baking.
You can also use penne or fettuccine instead of linguine.
