  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dry white wine (optional)
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil: In a skillet over medium heat, add olive oil. Cook chopped onion until softened, about 3-4 minutes.
  2. Add garlic and tomatoes: Stir in minced garlic and cook for 30 seconds. Add diced tomatoes, tomato paste, red pepper flakes, oregano, salt, pepper, and wine if using. Simmer for 10-12 minutes until sauce thickens.
  3. Cook shrimp: Add shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and cooked through.
  4. Add feta and parsley: Sprinkle feta over the shrimp and cook for an additional 1-2 minutes until the cheese softens slightly. Remove from heat, garnish with parsley, and serve with lemon wedges.
