Short Ribs:

  • 3 lbs bone-in beef short ribs

Marinade:

  • 1 cup pitted green olives
  • 1/2 cup prunes (chopped)
  • 1/4 cup capers with brine
  • 4 garlic cloves (minced)
  • 2 tbsp brown sugar
  • 1/2 cup red wine vinegar
  • 1/2 cup dry red wine
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper

Garnish:

  • ¼ cup chopped parsley

Instructions

  1. Marinating: In a large bowl or sealable bag, combine short ribs with olives, prunes, capers, garlic, brown sugar, vinegar, wine, olive oil, oregano, bay leaves, salt, and pepper. Marinate in the fridge overnight or for at least 4 hours.
  2. Baking: Preheat oven to 325°F (163°C). Transfer ribs and marinade to a Dutch oven. Bake covered for 2½ to 3 hours. Uncover for the last 20 minutes to reduce sauce.
  3. Serving: Place ribs on a platter, top with sauce, olives, prunes, and capers. Garnish with parsley and serve hot.
