4 large eggs
2 tablespoons milk or cream
2 tablespoons unsalted butter (divided)
2 tablespoons chopped fresh chives

Instructions
Prepare the Grated Potato: Place the grated potato in a clean kitchen towel and squeeze out excess moisture.
Cook the Potatoes: Heat 1 tablespoon of butter in a nonstick skillet over medium heat. Add the grated potato and season with salt and pepper. Cook for 6–8 minutes until golden and crispy, stirring occasionally.
Whisk the Eggs: In a bowl, whisk the eggs with milk or cream and a pinch of salt.
Cook the Eggs: Remove the potatoes from the skillet. Add the remaining butter to the skillet and pour in the eggs. Cook gently over low heat, stirring slowly with a spatula until soft curds form.
