For the Chicken:

  • 1 pound boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 teaspoon white pepper

For Stir-Frying:

  • 1 tablespoon vegetable oil
  • 1 tablespoon garlic (minced)
  • 1 tablespoon ginger (minced)
  • 56 scallions (cut into 1-inch pieces, whites and greens separated)
  • 2 tablespoons water

Instructions

  1. Marinate the Chicken: In a medium bowl, combine the chicken with soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and white pepper. Marinate for 10–15 minutes.
  2. Stir-Fry: Heat vegetable oil in a skillet, add garlic and ginger. Cook until fragrant. Add the marinated chicken, stir-fry until cooked. Add scallion whites and water, cook briefly. Finish by adding scallion greens.
  3. Serve: Enjoy hot over rice or noodles.

Notes

  • This dish cooks quickly, so prep ingredients in advance.
