  • 1 1/2 lbs boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 45 scallions (cut into 1-inch pieces, separating white and green parts)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce (extra)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 cup chicken broth or water
  • cooked white rice for serving

Instructions

  1. Marinate the Chicken: In a medium bowl, combine the chicken with 1 tablespoon soy sauce and cornstarch. Let marinate for 10–15 minutes.
  2. Cook the Chicken: Heat vegetable oil and sesame oil in a large skillet. Cook the chicken until browned and cooked through. Set aside.
  3. Prepare the Sauce: In the same pan, sauté white parts of scallions, garlic, and ginger. Add oyster sauce, extra soy sauce, rice vinegar, sugar, and broth. Simmer.
  4. Combine and Serve: Return chicken to the pan, add green scallion parts, and toss in the sauce. Cook briefly and serve over rice.

Notes

  • For extra spice, add red pepper flakes or a chopped chili.
  • You can substitute hoisin sauce for oyster sauce if preferred.
