For the Chicken:

  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch

For the Stir-Fry Sauce:

  • 2 tablespoons vegetable oil
  • 4 scallions, white and green parts separated and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/4 cup water
  • 1 teaspoon cornstarch (for slurry, mixed with 1 tablespoon water)
  • Sesame seeds for garnish (optional)

Instructions

  1. Marinate the Chicken: Toss chicken with soy sauce and cornstarch; marinate for 10–15 minutes.
  2. Cook the Chicken: Brown marinated chicken in a skillet; set aside.
  3. Prepare the Sauce: Sauté white scallions, garlic, and ginger. Add oyster sauce, soy sauce, rice vinegar, sesame oil, sugar, and water. Thicken the sauce with cornstarch slurry.
  4. Combine and Serve: Return chicken to the pan, add green scallions, and garnish with sesame seeds. Serve hot over steamed rice.

Notes

  • You can use chicken breasts instead of thighs.
  • For a spicier dish, add chili garlic sauce or red pepper flakes.
