Ingredients

Units Scale

For the Chicken:

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

For the Peppers and Meat:

  • 8 ounces Italian sausage, casings removed
  • 1 large bell pepper, sliced (any color)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken thighs with oregano, basil, salt, and pepper. Cook the chicken for 5-6 minutes per side until browned and nearly cooked through. Remove and set aside.
  2. Cook the Sausage: In the same skillet, add Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. Sauté Peppers and Onions: Add sliced bell pepper, onion, and garlic to the skillet. Sauté for 5 minutes until softened.
  4. Simmer: Pour in diced tomatoes and chicken broth. Stir in crushed red pepper flakes, salt, and pepper. Return chicken and sausage to the skillet. Simmer for 10-15 minutes until the chicken is cooked through and the sauce thickens.
  5. Serve: Garnish with chopped parsley before serving. Enjoy with crusty bread, pasta, or rice.

Notes

  • Use mild or spicy Italian sausage based on preference.
  • Substitute chicken thighs with breasts if desired, adjusting cooking time.
  • Add mushrooms or zucchini for extra vegetables.
