Puff Pastry:
2 sheets store-bought puff pastry, thawed
Filling:
4 large eggs
6 strips cooked bacon, chopped
1/2cup shredded cheddar cheese
1/4cup chopped chives
Salt and black pepper, to taste
Egg Wash:
1 tablespoon milk or cream
Optional:
Hot sauce, for serving
Instructions
Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Filling: Scramble two eggs in a skillet with salt and pepper. Remove from heat when just set.
Assemble the Pop-Tarts: Roll out puff pastry sheets on a floured surface, cut into rectangles. Place filling ingredients on half of the rectangles, cover with the remaining pastry, seal edges with a fork, and vent with a slit on top.
Brush with Egg Wash: Beat remaining eggs with milk, brush over the tops of the pop-tarts.
Bake: Bake for 18–22 minutes until golden and puffed. Cool slightly before serving.
