- 1 tablespoon olive oil
- 1 pound Italian sausage, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 (15-ounce) can white beans, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced sausage and cook until browned, about 5-7 minutes.
- Remove sausage and set aside. In the same skillet, add chopped onion and cook until softened, about 3 minutes.
- Add garlic and red bell pepper; cook for another 2-3 minutes.
- Stir in the white beans, diced tomatoes, oregano, and red pepper flakes.
- Return the sausage to the skillet and simmer for 10 minutes, allowing flavors to meld.
- Season with salt and black pepper to taste.
- Garnish with chopped parsley before serving.
Notes
- Use spicy sausage for an added kick.
- Serve with crusty bread or over rice for a more filling meal.
