Dry Ingredients:
2 3/4cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Wet Ingredients:
1cup unsalted butter (softened)
1 1/2cups granulated sugar
1 large egg
1 teaspoon vanilla extract
Additional:
12 soft caramel candies (cut in half)
Flaked sea salt (for topping)
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
Combine Wet Ingredients: In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Form Cookie Dough: Gradually mix in the dry ingredients until a soft dough forms. Scoop dough into 1½ tablespoon-sized balls and flatten slightly.
Add Caramel: Press a caramel half into the center of each dough ball, then shape the dough around it to enclose the caramel completely.
Bake: Place the cookies on the baking sheet, about 2 inches apart, and bake for 10–12 minutes until the edges are lightly golden.
Finish: Sprinkle the warm cookies with flaked sea salt and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use soft, chewy caramels.
If the dough is sticky, chill it for 20 minutes before shaping.
These cookies are best enjoyed the same day for maximum gooeyness.
