3cups mashed sweet potatoes (about 3-4 large)
1cup granulated sugar
1/2 tsp salt
1 tsp vanilla extract
2 large eggs, beaten
1/2cup unsalted butter, melted
For the Pecan Topping:
1cup light brown sugar, packed
1/3cup all-purpose flour
1cup chopped pecans
1/3cup unsalted butter, melted
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Mix sweet potato base: In a large bowl, combine the mashed sweet potatoes, granulated sugar, salt, vanilla extract, eggs, and melted butter. Pour into the baking dish.
Prepare pecan topping: In another bowl, mix brown sugar, flour, pecans, and melted butter. Sprinkle over the sweet potato layer.
Bake: Bake for 30–35 minutes until golden and set. Let cool slightly before serving.

You can prepare this casserole in advance and refrigerate it until ready to bake.
