  • 1/4 cup water
  • 2 tablespoons unsalted butter, melted (plus more for cooking)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, combine flour, sugar, and salt.
  2. Prepare Wet Mixture: In another bowl, beat eggs, then mix in milk, water, and vanilla extract.
  3. Combine Mixtures: Gradually add wet mixture to dry ingredients, whisking until smooth. Stir in melted butter.
  4. Rest Batter: Allow batter to rest for 20–30 minutes.
  5. Cook Blini: Heat skillet, pour batter, cook until edges lift and flip to cook the other side. Repeat with remaining batter.
  6. Serve: Enjoy warm with desired toppings.

Notes

  • For savory blini, omit the sugar and vanilla.
  • These can be made ahead and reheated gently.
