Soup Base:

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 celery stalks, sliced
  • 2 carrots, sliced
  • 8 ounces cremini or white mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth

Additional Ingredients:

  • 2 cups shredded rotisserie chicken
  • 1/2 cup heavy cream or half-and-half
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Base: Heat olive oil and butter in a large pot. Sauté onion, garlic, celery, and carrots until softened.
  2. Add Flavor: Stir in mushrooms, thyme, rosemary, salt, and pepper. Cook until mushrooms are tender.
  3. Thicken: Sprinkle flour over vegetables and stir to coat. Gradually add chicken broth while stirring.
  4. Cook: Bring to a boil, then simmer for 10 minutes. Add chicken and simmer for another 5 minutes.
  5. Finish: Stir in cream and cook until heated through. Adjust seasoning and garnish with parsley.
