Ingredients
Scale
Potatoes
- 1 kg (about 2 lbs) baby potatoes
Garlic Butter Sauce
- 6 cloves garlic, minced
- 100 g (about 7 tablespoons) unsalted butter
- 2 tablespoons olive oil
Seasonings
- Salt, to taste
- Black pepper, to taste
- 100 g (about 1 cup) grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the Potatoes: Wash the baby potatoes thoroughly under cold running water to remove any dirt. Pat them dry using a clean kitchen towel or paper towels to ensure they roast evenly.
- Melt Garlic Butter: In a small saucepan over low heat, melt the unsalted butter gently. Add the minced garlic and cook for 1-2 minutes, stirring occasionally, until fragrant but not browned, to infuse the butter with garlic flavor.
- Season Potatoes: Transfer the washed potatoes into a large mixing bowl. Add the olive oil, salt, and black pepper to taste. Toss well to evenly coat all the potatoes with the seasoning and oil.
- Add Garlic Butter: Pour the melted garlic butter over the seasoned potatoes and toss thoroughly again, ensuring the garlic butter is well distributed on each potato.
- Roast the Potatoes: Line a baking sheet with parchment paper and spread the potatoes out in a single layer. Place in a preheated oven at 200°C (400°F) and roast for 30-35 minutes. Turn the potatoes halfway through cooking to ensure even browning on all sides.
- Finish with Parmesan and Parsley: Once the potatoes are tender and golden, remove them from the oven. Immediately sprinkle the grated Parmesan cheese over the hot potatoes and gently toss to coat them in the melted cheese. Garnish with chopped fresh parsley and serve warm.
Notes
- Use baby potatoes of similar size to ensure even cooking.
- You can substitute Parmesan with Pecorino Romano for a sharper flavor.
- For extra crispiness, increase roasting time by 5-10 minutes but watch closely to prevent burning.
- Add a pinch of red chili flakes for a spicy kick.
- These potatoes are best served fresh but can be reheated in the oven to retain crispiness.
