Pizza Dough:

  • 1 ball pizza dough (about 1214 oz)

Roasted Garlic:

  • 1 whole head garlic
  • 2 tablespoons olive oil, divided

Toppings:

  • 1 cup cooked chicken breast, shredded
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley or basil (optional)
  • cornmeal or flour for dusting

Instructions

  1. Roast the Garlic: Preheat the oven to 400°F. Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35–40 minutes. Mash into a paste.
  2. Prepare the Pizza: Increase the oven to 475°F. Roll out the dough, spread roasted garlic over it, add ricotta, chicken, cheeses, herbs, salt, and pepper.
  3. Bake: Transfer the pizza to a preheated stone or baking sheet and bake for 12–15 minutes until golden and bubbly.
