Tofu:

  • 1 block (14 oz) extra-firm tofu (pressed and cubed)
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Brussels Sprouts:

  • 1 lb Brussels sprouts (trimmed and halved)
  • 1 tablespoon olive oil
  • Pinch of salt and pepper

Honey-Sesame Glaze:

  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sesame seeds
  • Sliced green onions for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the tofu: Toss the cubed tofu with 1 tablespoon olive oil, cornstarch, salt, and pepper. Spread on half of the baking sheet.
  3. Prepare the Brussels sprouts: Toss the halved Brussels sprouts with remaining olive oil, salt, and pepper. Arrange on the other half of the baking sheet.
  4. Roast: Roast for 25–30 minutes, flipping halfway through, until tofu is crispy and Brussels sprouts are tender.
  5. Make the glaze: In a saucepan, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Simmer until slightly thickened.
  6. Combine and serve: Transfer tofu and Brussels sprouts to a bowl, drizzle with glaze, and toss gently. Garnish with sesame seeds and green onions.

Notes

  • To make this recipe vegan, substitute maple syrup or agave for the honey.
  • Add cooked rice or quinoa for a complete meal.
