- 1 box white cake mix (plus ingredients listed on box: usually eggs, oil, and water)
- 1 package (3 oz) strawberry or cherry gelatin
- 1 package (3 oz) berry blue gelatin
- 2 cups boiling water (1 cup per gelatin flavor)
- 1 container (8 oz) whipped topping, thawed
- Fresh strawberries, sliced (optional, for garnish)
- Fresh blueberries (optional, for garnish)
Instructions
- Prepare and bake the white cake according to the package instructions in a 9×13-inch baking dish. Let it cool for about 15 minutes.
- Using the handle of a wooden spoon, poke holes all over the cake about 1 inch apart.
- In separate bowls, dissolve the red and blue gelatin each in 1 cup of boiling water. Stir until completely dissolved.
- Spoon the red gelatin into half of the holes and the blue gelatin into the other half. Pour slowly to allow the gelatin to absorb.
- Refrigerate the cake for at least 3-4 hours or until completely chilled and set.
- Spread the whipped topping evenly over the cake.
- Garnish with fresh strawberries and blueberries if desired.
- Slice and serve chilled.
Notes
- Make sure the cake is slightly cooled before poking holes and adding gelatin.
- Refrigerating overnight can enhance the flavor and make slicing easier.
- Use sugar-free gelatin for a lighter version.
