For the crust:

  • 1 1/2 cups chocolate cookie crumbs (such as Oreos, finely crushed)
  • 1/4 cup unsalted butter, melted

For the red velvet layer:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • 1 tablespoon red food coloring
  • 1/2 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon white vinegar

For the cheesecake layer:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped fresh strawberries

For the topping (optional):

  • 1 cup fresh sliced strawberries
  • Whipped cream for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Prepare the crust: Mix chocolate cookie crumbs with melted butter, press into the pan for the crust.
  3. Make the red velvet layer: Cream butter and sugar, add egg, vanilla, cocoa, food coloring, buttermilk. Mix dry ingredients separately and combine. Spread over crust.
  4. Prepare the cheesecake layer: Beat cream cheese, sugar, eggs, vanilla until creamy. Fold in strawberries. Pour over red velvet layer.
  5. Bake: Bake for 50–60 minutes until set. Cool, then chill for at least 4 hours.
  6. Serve: Top with sliced strawberries and whipped cream.

Notes

  • You can swirl the red velvet and cheesecake layers for a marbled look.
