Ingredients:

  • 1 cup red lentils, rinsed and drained
  • 1 tablespoon coconut oil or olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium tomato, chopped
  • 3 cups water or low-sodium vegetable broth
  • 1/2 cup canned coconut milk
  • juice of 1/2 lemon
  • optional: chopped fresh cilantro for garnish

Instructions

  1. Heat the oil: Heat the coconut oil in a medium saucepan over medium heat.
  2. Sauté onion: Add the chopped onion and sauté until soft. Stir in garlic and ginger.
  3. Add spices: Stir in cumin, coriander, turmeric, chili powder, cinnamon, salt, and pepper. Cook until fragrant.
  4. Cook tomatoes: Add the tomato and cook for 2 minutes.
  5. Add lentils and liquid: Add lentils and water/broth. Simmer for 20-25 minutes.
  6. Finish dish: Stir in coconut milk and lemon juice. Simmer for 5 minutes. Adjust seasoning and serve garnished with cilantro.

Notes

  • For a spicier dahl, add cayenne or green chili.
  • This dish pairs well with rice or naan.
  • Leftovers can be refrigerated for up to 5 days or frozen.
