Main Soup:

  • 2 tablespoons vegetable oil
  • 1 1/2 pounds boneless skinless chicken thighs or breasts
  • Salt and pepper to taste
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 4 dried guajillo chiles (stemmed, seeded, and soaked in hot water until soft)
  • 6 cups chicken broth
  • 1 can (25 ounces) hominy (drained and rinsed)
  • Juice of 1 lime

Toppings:

  • Shredded cabbage
  • Sliced radishes
  • Chopped onion
  • Fresh cilantro
  • Avocado slices
  • Lime wedges
  • Tortilla chips

Instructions

  1. Season the chicken: Season the chicken with salt and pepper.
  2. Sear the chicken: In a large pot, heat oil over medium-high heat. Sear the chicken on both sides until lightly browned. Set aside.
  3. Sauté onions and spices: In the same pot, sauté the onion until softened. Add garlic, cumin, oregano, and chili powder. Cook until fragrant.
  4. Prepare the broth: Blend softened guajillo chiles with 1 cup of chicken broth until smooth. Strain the mixture into the pot. Add remaining broth and hominy.
  5. Cook the soup: Return the chicken to the pot. Bring to a boil, then simmer for 25–30 minutes. Shred the chicken and return it to the soup.
  6. Finish and serve: Stir in lime juice and adjust seasoning. Serve hot with toppings of your choice.

Notes

  • Guajillo chiles provide color and mild heat. Add ancho or chipotle chiles for extra flavor.
  • Rotisserie chicken can be used for convenience.
