Indulge in the refreshing sweetness of Raspberry Sorbet with a hint of fresh mint. This dairy-free frozen treat is bursting with the flavors of ripe raspberries and zesty lemon, making it a perfect dessert for any occasion.

Ingredients

Units Scale

Raspberry Sorbet:

  • 4 cups fresh or frozen raspberries
  • 3/4 cup granulated sugar
  • 3/4 cup water
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely chopped fresh mint

Garnish:

  • Extra mint leaves for garnish (optional)

Instructions

  1. Prepare Simple Syrup: In a small saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved to make a simple syrup. Remove from heat and let cool to room temperature.
  2. Blend Raspberry Mixture: In a blender or food processor, purée the raspberries with the lemon juice and cooled syrup until smooth. Strain the mixture through a fine mesh sieve to remove the seeds. Stir in the chopped fresh mint.
  3. Churn Sorbet: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes.
  4. Freeze Sorbet: Transfer the sorbet to a freezer-safe container and freeze for at least 2 hours, or until firm.
  5. Serve: Scoop into bowls and garnish with fresh mint leaves if desired.

Notes

  • If you don’t have an ice cream maker, pour the mixture into a shallow dish, freeze, and stir every 30 minutes until smooth and frozen.
  • You can substitute other berries or add a splash of raspberry liqueur for an adult twist.
