Ingredients:

  • 1 cup fresh raspberries
  • 8 ounces mascarpone cheese, softened
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • fresh mint leaves for garnish (optional)

Instructions

  1. In a mixing bowl, beat the mascarpone and cream cheese together until smooth and creamy.
  2. Add the powdered sugar and vanilla extract, and continue mixing until fully combined.

  3. Gently fold in the raspberries, leaving some whole and others slightly broken for texture and flavor.
  4. Add the heavy cream and mix until the dip reaches a light, fluffy consistency.

  5. Transfer to a serving bowl and chill for 20–30 minutes before serving.
  6. Garnish with fresh mint leaves if desired. Serve with sliced fruit, graham crackers, or cookies.

Notes

  • If using frozen raspberries, thaw and drain them well before folding into the dip.
  • For a smoother dip, blend the raspberries before mixing.
  • This dip pairs especially well with strawberries, apple slices, or vanilla wafers.
