White Chocolate Filling:
4oz white chocolate, chopped
1/4cup heavy cream
4oz cream cheese, softened
2 Tbsp powdered sugar
1/2 tsp vanilla extract

1cup fresh raspberries
1 Tbsp raspberry jam (optional for glaze)
Fresh mint leaves for garnish (optional)
Instructions
Melt White Chocolate: In a heatproof bowl, melt white chocolate and heavy cream together over a double boiler or in the microwave in 20-second intervals, stirring until smooth. Allow to cool slightly.
Prepare Filling: In a separate bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Fold in melted white chocolate mixture until fully combined.
Fill Tartlet Shells: Spoon or pipe the filling into pre-baked tartlet shells. Top each tartlet with fresh raspberries.
Optional Glaze: If desired, warm raspberry jam slightly and brush over berries for a glossy finish.
Garnish: Garnish with mint leaves if using. Chill tartlets for at least 30 minutes before serving.
Notes
Use frozen raspberries if fresh are unavailable, but thaw and drain them well to avoid excess moisture.
You can make the filling a day in advance and assemble just before serving.
