- 12 oz rotini pasta
- 1 cup ranch dressing
- 1/2 cup sour cream
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1/2 cup chopped red onion
- 1/2 cup diced cucumber
- 1/2 cup chopped bell pepper (any color)
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, mix together ranch dressing and sour cream until smooth.
- Add the cooked pasta to the bowl and stir to coat.
- Add cherry tomatoes, cheddar cheese, red onion, cucumber, bell pepper, and olives. Mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
- Garnish with chopped parsley before serving.
Notes
- You can add grilled chicken or bacon for extra protein.
- Use homemade ranch dressing for a fresher taste.
- Best served chilled.
