Description

A creamy and flavorful ranch pasta salad loaded with veggies and cheese, perfect for picnics, potlucks, or as a refreshing side dish.


Ingredients

  • 12 oz rotini pasta
  • 1 cup ranch dressing
  • 1/2 cup sour cream
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped red onion
  • 1/2 cup diced cucumber
  • 1/2 cup chopped bell pepper (any color)
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, mix together ranch dressing and sour cream until smooth.
  3. Add the cooked pasta to the bowl and stir to coat.
  4. Add cherry tomatoes, cheddar cheese, red onion, cucumber, bell pepper, and olives. Mix well.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Garnish with chopped parsley before serving.

Notes

  • You can add grilled chicken or bacon for extra protein.
  • Use homemade ranch dressing for a fresher taste.
  • Best served chilled.
