  • 2 packs instant ramen noodles (discard seasoning packets)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Garnish:

  • Chopped chives for garnish (optional)

Instructions

  1. Cook Ramen Noodles: Cook ramen noodles according to package instructions, drain, and set aside.
  2. Make Cheese Sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux. Gradually add milk, whisking constantly to prevent lumps. Cook until sauce thickens, about 4–5 minutes.
  3. Add Cheese and Seasonings: Remove from heat and stir in cheddar, mozzarella, garlic powder, onion powder, mustard powder, salt, and pepper until smooth.
  4. Combine Noodles and Sauce: Add cooked ramen noodles to the cheese sauce and stir to coat evenly.
  5. Serve: Transfer to a serving dish and sprinkle with Parmesan cheese. Garnish with chopped chives if desired. Serve warm.
