Units Scale

Cookie Dough:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 3/4 cup pumpkin purée (not pumpkin pie filling)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups white chocolate chips

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Ingredients: In a large bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in pumpkin purée, egg, and vanilla extract until fully combined.
  3. Mix the Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in white chocolate chips.
  4. Bake: Drop rounded tablespoons of dough onto the baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes until edges are lightly golden and centers are set. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For a slightly chewier cookie, blot the pumpkin purée with paper towels to remove excess moisture before using.
  • These cookies stay soft and are great for gifting or freezing.
