1cup old-fashioned rolled oats
1/2cup vanilla protein powder
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
pinch of salt
Wet Ingredients:
1/2cup canned pumpkin puree
1/4cup almond butter
1/4cup honey or maple syrup
1/2 teaspoon vanilla extract
2 tablespoons mini chocolate chips or chopped nuts (optional)
Instructions
Combine Ingredients: In a medium mixing bowl, mix together oats, protein powder, pumpkin puree, almond butter, honey, pumpkin pie spice, cinnamon, vanilla extract, and salt until fully combined.
Add Optional Ingredients: Stir in mini chocolate chips or nuts if desired. Chill the mixture in the refrigerator for 20-30 minutes.
Form Balls: Roll the mixture into 1-inch balls using your hands or a small scoop.
Chill and Store: Place the balls on a parchment-lined tray and refrigerate until firm. Store in an airtight container in the refrigerator for up to 1 week.
Notes
For a vegan version, use plant-based protein powder and maple syrup.
You can add chia seeds or ground flax for extra fiber and omega-3s.
