  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Wet Ingredients:

  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease and line an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together oats, flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Combine Wet Ingredients: In another bowl, mix melted butter, brown sugar, egg, pumpkin puree, and vanilla until smooth.
  4. Mix Batter: Combine wet and dry ingredients until just mixed. Fold in mini chocolate chips or nuts if using.
  5. Bake: Spread the batter evenly into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
