  • 1/4 cup coconut oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 350°F (175°C) and line a muffin tin with 10 paper liners or lightly grease the wells.
  2. Mix dry ingredients: In a medium bowl, whisk together the oat flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Combine wet ingredients: In a large bowl, whisk the eggs, pumpkin puree, maple syrup, milk, coconut oil, and vanilla until smooth.
  4. Combine wet and dry ingredients: Add the dry ingredients to the wet ingredients and stir until just combined. Fold in chocolate chips or nuts if using.
  5. Bake: Divide the batter among the muffin cups and bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and serve: Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
