  • 2/3 cup packed brown sugar
  • 2 large eggs
  • 1 cup canned pumpkin purée
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
  2. Combine Dry Ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. Mix Wet Ingredients: In a separate bowl, beat brown sugar, eggs, pumpkin purée, oil, milk, and vanilla extract until well combined.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Bake: Divide the batter into muffin cups and bake for 20–22 minutes until a toothpick comes out clean.
  6. Cool and Serve: Let the muffins cool in the tin before transferring to a wire rack to cool completely.
