Pie Crust:

  • 1 package refrigerated pie crusts (2 crusts)

Pumpkin Filling:

  • 1 cup canned pumpkin puree
  • 1/4 cup brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Other:

  • 1 large egg (beaten for egg wash)
  • 2 tablespoons coarse sugar for sprinkling

Instructions

  1. Preheat oven and prepare baking sheet: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare pumpkin filling: In a bowl, mix together pumpkin puree, brown sugar, granulated sugar, pumpkin pie spice, cinnamon, egg, vanilla extract, and salt until smooth.
  3. Assemble hand pies: Unroll pie crusts, cut into circles, place pumpkin filling, seal edges, brush with egg wash, sprinkle with coarse sugar.
  4. Bake: Place hand pies on baking sheet, make slits for steam, bake for 20-25 minutes until golden brown.
  5. Cool and serve: Cool slightly before serving.

Notes

  • You can make a glaze with powdered sugar and milk to drizzle over cooled pies for extra sweetness.
  • These can also be made with homemade pie crust if preferred.
