Peanut Butter Mixture:

  • 1/2 cup natural peanut butter (smooth or crunchy)
  • 1/4 cup coconut oil, melted
  • 1/4 cup protein powder (vanilla or chocolate)
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Chocolate Layer:

  • 1 cup dark chocolate chips

Instructions

  1. Prepare the Peanut Butter Mixture: Line a mini muffin tin with paper liners. In a medium bowl, combine peanut butter, melted coconut oil, protein powder, honey, vanilla extract, and salt. Stir until smooth and well combined.
  2. Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring between each, until fully melted.
  3. Assemble the Cups: Spoon about 1 teaspoon of melted chocolate into the bottom of each muffin liner. Freeze for 5 minutes to set. Remove from freezer and add about 1 teaspoon of the peanut butter mixture on top of the chocolate layer in each cup, pressing lightly to flatten. Top with another teaspoon of melted chocolate to cover the peanut butter layer.
  4. Chill and Serve: Freeze for at least 30 minutes until firm. Store the peanut butter cups in an airtight container in the refrigerator.
