  • 3 tablespoons vegetable oil
  • 1 1/2 pounds russet potatoes, peeled and diced into 1/2-inch cubes

Additional Ingredients:

  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 1/2 small yellow onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat the oil: Heat the oil in a large skillet over medium heat.
  2. Cook the potatoes: Add the diced potatoes to the skillet, spreading them into an even layer. Cook undisturbed for 5–7 minutes until they begin to crisp on the bottom.
  3. Continue cooking: Stir the potatoes and cook for another 10–12 minutes until golden and tender.
  4. Add peppers and onion: Add the diced bell peppers and onion to the skillet. Cook for 5–7 minutes until softened and lightly browned.
  5. Season and garnish: Season with garlic powder, paprika, salt, and pepper. Stir to combine and cook for an additional 1–2 minutes. Garnish with chopped parsley if desired.
  6. Serve: Serve hot and enjoy!

Notes

  • To save time, you can parboil the potatoes for 5 minutes before pan-frying.
  • Yukon gold potatoes also work well for a creamier texture.
