Units Scale

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 4 cups crushed potato chips (plain or flavored)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray or melted butter for drizzling

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and set a wire rack on top.
  2. Prepare the chicken: Pound the chicken breasts to an even thickness if needed.
  3. Set up breading station: Create a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with crushed potato chips mixed with garlic powder, paprika, and pepper.
  4. Coat the chicken: Dredge each chicken breast in flour, dip in the egg, then press into the crushed chips, coating completely. Place coated chicken on the wire rack.
  5. Bake: Lightly spray with nonstick cooking spray or drizzle with melted butter. Bake for 25–30 minutes until golden brown and cooked through (internal temp of 165°F). Let rest for 5 minutes before serving.

Notes

  • Use flavored chips like BBQ or sour cream & onion for a fun twist.
  • Great served with ranch, honey mustard, or ketchup for dipping.
