Marinade:
1 1/2lbs boneless, skinless chicken thighs
1/4cup olive oil
1/4cup lime juice
2 tablespoons orange juice
2 tablespoons white vinegar
1 tablespoon soy sauce
1 tablespoon garlic, minced
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
Prepare the Marinade: In a large bowl or zip-top bag, combine olive oil, lime juice, orange juice, vinegar, soy sauce, garlic, cumin, chili powder, paprika, oregano, salt, and pepper. Add chicken thighs, coat well, and marinate for at least 2 hours.
Grill the Chicken: Preheat grill or skillet over medium-high heat. Grill chicken for 6–8 minutes per side until fully cooked and charred.
Serve: Let the chicken rest before slicing. Serve over warm Mexican rice, garnished with cilantro and lime wedges.
Notes
