  • 3/4 cup finely ground pistachios

Filling:

  • 1/2 cup pistachio cream or pistachio spread
  • Additional powdered sugar for dusting (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
  3. Add Dry Ingredients: Gradually add the flour, salt, and ground pistachios, mixing until a soft dough forms.
  4. Shape and Bake: Roll dough into 1-inch balls and place on the prepared baking sheet. Flatten gently and bake for 12–14 minutes until lightly golden.
  5. Assemble: Cool the cookies, then spread pistachio cream on one cookie bottom and sandwich with another. Dust with powdered sugar if desired.
