Pineapple Christmas Balls

A sweet and festive holiday treat, Pineapple Christmas Balls are made with crushed pineapple, coconut, and a rich, creamy coating. Perfect for holiday parties and gifting.

  • 1 cup crushed pineapple, drained
  • 1 cup powdered sugar
  • 1 cup shredded coconut
  • 1/4 cup butter, softened
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sweetened condensed milk
  • Red and green sugar crystals (for rolling, optional)

Instructions

  1. In a large bowl, combine the crushed pineapple, powdered sugar, coconut, butter, and vanilla extract.
  2. Mix until well combined, then add the sweetened condensed milk and stir again until smooth.
  3. Optionally fold in chopped nuts if using.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, roll the mixture into small balls, about 1 inch in diameter.
  6. If desired, roll each ball in red and green sugar crystals to give a festive look.
  7. Place the balls on a parchment-lined tray and refrigerate for at least an hour to set before serving.
  8. Store in an airtight container in the refrigerator until ready to serve.

Notes

  • For a dairy-free version, substitute the butter with a plant-based alternative.
  • You can also roll the balls in finely chopped nuts instead of sugar crystals for extra texture and flavor.
