1cup crushed pineapple, drained
1cup powdered sugar
1cup shredded coconut
1/4cup butter, softened
1/2cup chopped pecans or walnuts (optional)
1/2 teaspoon vanilla extract
1/2cup sweetened condensed milk
Red and green sugar crystals (for rolling, optional)
Instructions
In a large bowl, combine the crushed pineapple, powdered sugar, coconut, butter, and vanilla extract.
Mix until well combined, then add the sweetened condensed milk and stir again until smooth.
Optionally fold in chopped nuts if using.
Refrigerate the mixture for about 30 minutes to firm up.
Once chilled, roll the mixture into small balls, about 1 inch in diameter.
If desired, roll each ball in red and green sugar crystals to give a festive look.
Place the balls on a parchment-lined tray and refrigerate for at least an hour to set before serving.
Store in an airtight container in the refrigerator until ready to serve.
Notes
For a dairy-free version, substitute the butter with a plant-based alternative.
