Gnocchi:

  • 1 lb potato gnocchi (store-bought or homemade)

Pesto:

  • 1 cup fresh basil pesto
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • fresh basil leaves for garnish

Instructions

  1. Boil Gnocchi: Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the top, about 2–3 minutes. Drain and set aside.
  2. Sauté Garlic: In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  3. Combine Ingredients: Add cooked gnocchi to the skillet and toss lightly. Stir in basil pesto until gnocchi are well coated. Season with salt and black pepper to taste.
  4. Finish and Serve: Sprinkle with Parmesan cheese and toasted pine nuts if desired. Garnish with fresh basil leaves and serve immediately.
