Ingredients

For the chicken:

1 whole chicken (about 3-4 pounds), 3 tablespoons olive oil, 2 teaspoons ground cumin, 2 teaspoons paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon white vinegar or lime juice.

For the green sauce (Aji Verde):

1 cup fresh cilantro leaves (packed), 1/2 cup mayonnaise, 1 jalapeño (seeded for milder sauce), 2 cloves garlic, 2 tablespoons lime juice, 1 tablespoon white vinegar, 1 teaspoon honey, 1/4 teaspoon salt, 1/4 cup olive oil (or more for desired consistency), 2 tablespoons water (optional to thin).

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Season the chicken: Combine olive oil, cumin, paprika, garlic powder, onion powder, salt, pepper, and vinegar/lime juice. Rub all over the chicken.
  3. Roast the chicken: Place chicken on a baking sheet and roast for 40-45 minutes until crispy and internal temp reaches 165°F (75°C).
  4. Make the green sauce: Blend cilantro, mayonnaise, jalapeño, garlic, lime juice, vinegar, honey, salt. Slowly add olive oil until creamy. Thin with water if needed.
  5. Serve: Drizzle green sauce over chicken or serve as a dipping sauce.
