Dry Ingredients:
2 1/4cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Wet Ingredients:
3/4cup granulated sugar
1/2cup vegan butter (softened)
1/4cup unsweetened applesauce
1 tablespoon plant-based milk (almond, oat, or soy)
1 1/2 teaspoons vanilla extract
Extra sugar for rolling
Instructions
Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
Mix Wet Ingredients: In a separate large bowl, beat the vegan butter and sugar until light and fluffy. Add the applesauce, plant-based milk, and vanilla extract, and mix until combined.
Combine and Form Dough: Gradually add the dry ingredients to the wet, mixing just until a soft dough forms. Scoop tablespoon-sized portions of dough and roll into balls.
Bake: Roll each ball in sugar and place on the baking sheet about 2 inches apart. Gently flatten the tops with the bottom of a glass or your fingers. Bake for 8–10 minutes until the edges are set and the centers look slightly underbaked.
Cool and Enjoy: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a festive twist, mix in sprinkles or roll in colored sugar.
Do not overbake—cookies will firm up as they cool.
