Ingredients

Units Scale

Dry Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 3/4 cup granulated sugar
  • 1/2 cup vegan butter (softened)
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon plant-based milk (almond, oat, or soy)
  • 1 1/2 teaspoons vanilla extract
  • Extra sugar for rolling

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. Mix Wet Ingredients: In a separate large bowl, beat the vegan butter and sugar until light and fluffy. Add the applesauce, plant-based milk, and vanilla extract, and mix until combined.
  4. Combine and Form Dough: Gradually add the dry ingredients to the wet, mixing just until a soft dough forms. Scoop tablespoon-sized portions of dough and roll into balls.
  5. Bake: Roll each ball in sugar and place on the baking sheet about 2 inches apart. Gently flatten the tops with the bottom of a glass or your fingers. Bake for 8–10 minutes until the edges are set and the centers look slightly underbaked.
  6. Cool and Enjoy: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For a festive twist, mix in sprinkles or roll in colored sugar.
  • Do not overbake—cookies will firm up as they cool.
