Cupcakes:

  • 1/2 cup brewed coffee (cooled)
  • 1/2 cup buttermilk
  • 1 teaspoon peppermint extract
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup mini chocolate chips (optional)

Peppermint Mocha Frosting:

  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon brewed coffee
  • 1/2 teaspoon peppermint extract
  • 12 tablespoons heavy cream (as needed)
  • Crushed peppermint candies and chocolate shavings for garnish

Instructions

  1. Preheat the oven and prepare the cupcake batter: Preheat the oven to 350°F and line a muffin tin. Whisk together the dry ingredients in one bowl and the wet ingredients in another.
  2. Mix the cupcake batter: Cream butter and sugar, add eggs, and alternately mix in dry ingredients and coffee mixture.
  3. Bake the cupcakes: Fill liners and bake for 18–20 minutes until done. Cool completely.
  4. Prepare the frosting: Beat butter, add sugar and cocoa, mix in coffee and peppermint extract, adjust consistency with cream.
  5. Frost the cupcakes: Pipe frosting onto cooled cupcakes and garnish with peppermint and chocolate.
