Instructions
Preheat the Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
Mix Wet Ingredients: In a large mixing bowl, cream together the peanut butter, butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the oats, flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Form Cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
