Instructions
Prepare Cookie Base: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper. Cream together peanut butter, butter, brown sugar, and granulated sugar. Beat in egg and vanilla. Mix in dry ingredients, then fold in chocolate chips. Press most of the dough into the pan.
Make Cheesecake Layer: Beat cream cheese, sugar, egg, and vanilla until smooth. Spread over cookie dough. Crumble reserved dough on top.
