1/2cup unsalted butter, softened
1/2cup creamy peanut butter
1/2cup granulated sugar
1/2cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1cup semi-sweet chocolate chips
Filling:
12 soft caramel candies, halved
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the dough: Cream together butter, peanut butter, granulated sugar, and brown sugar. Add egg and vanilla; mix well. In a separate bowl, whisk flour, baking soda, and salt. Combine wet and dry ingredients, fold in chocolate chips.
Assemble cookies: Scoop dough, press caramel into each, wrap dough around caramel, and roll into a ball. Place on baking sheet.
Bake: Bake for 10–12 minutes until edges are golden. Cool on sheet before transferring to a wire rack.
Notes
