Peanut Butter Balls:

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Chocolate Coating:

  • 2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother coating)

Instructions

  1. In a large bowl, mix the peanut butter and softened butter until smooth and creamy.
  2. Stir in the vanilla and salt. Gradually add the powdered sugar, mixing until a stiff dough forms.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Chill in the refrigerator for 30–45 minutes, or until firm.
  5. In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in 20–30 second intervals, stirring between each, until smooth.
  6. Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, allowing excess to drip off.
  7. Place coated balls back on the baking sheet and refrigerate for another 30 minutes, or until chocolate is set.

  • You can substitute crunchy peanut butter for added texture.
  • These freeze well—store in an airtight container for up to 3 months.
  • For a classic Buckeye version, leave the tops of the peanut butter balls exposed when dipping in chocolate.
