Ingredients

1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
2 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking powder

For the Filling:

1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
1 (21 oz) can peach pie filling

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream Butter and Sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  4. Layer the Batter: Spread two-thirds of the batter into the prepared pan. In another bowl, beat the cream cheese with powdered sugar until smooth, then spread evenly over the batter. Spoon the peach pie filling over the cream cheese layer.
  5. Bake: Drop the remaining batter in spoonfuls over the top. Bake for 40 to 45 minutes or until the top is golden brown and set. Cool completely before cutting into bars.

Notes

  • Fresh peaches can be used instead of canned pie filling; just toss sliced peaches with a little sugar and cornstarch before layering.
